Ingredients
1lbcougar chorizo(see recipe at MiaAnstine.com)
2tbspbuttersubstitute your oil of choice
1cupcelerychopped
1smalloniondiced
3/4cupcarrotgrated
4clovesgarlicminced
1bag (14 oz)cubed herb seasoned stuffing mix
2cupschicken broth
Instructions
Preheat oven to 325°F.Add the cougar sausage to the skillet, cover, and heat it to medium. Use a spoon or spatula to break up the meat, turning it to brown and cook through on all sides.
Melt the butter in a separate stock pot over medium-high heat, then add the celery, onion, carrots, garlic and rosemary, sauteing them until the onions are translucent.
Remove the vegetables from the heat, and add the meat and stuffing mix to the pot, mixing them well to combine.
Stir the chicken broth into the mixture.
Lightly grease a 2-quart casserole or soufflé dish, add the mix, and cover with a lid or foil.
Place in the oven and bake for 50 minutes to 1 hour or until cooked thoroughly. (160°F).
